Raspberry Mocktail Mojito
As I mentioned in my previous post, I don't drink alcohol and no it does not make me boring! There are lots of drinks you can have without needing alcohol to make them taste good. You can also have fun creating your own!
Matt and I made these Raspberry Mojito Mocktails using fresh ingredients and it proved the perfect palete cleanseer for our Valentine's dinner.
Ingredients
Fresh raspberries
Water
Sugar
Soda water
Fresh limes
Mint leaves
Raspberry juice
Method (serves 4)
1. Mix 1 cup of water and 1 cup of sugar in a pan and boil until the sugar has disolved.
2. Leave to cool.
3. Mix fresh raspberries (around 3-4), mint leaves and the sugar syrup, without breaking the mint leaves.
4. Top up the glass with ice.
5. Add soda water and raspberry juice to taste.
Lucy's Top Tips:
.If you want this to be a real cocktail, replace the sugar water with a dash of sambuca
.Don't add to much Mint! Our first batch of mocktails were slightly overbearing and through trial and error we found that 1 mint leaf is the ideal amount.
.Drink through a straw to avoid swallowing mint leaves whole!
