Banoffee Balls
I recently saw this recipe on a facebook site I follow; 'Tasty'. Although I am vegan, I love baking in any form and find joy in other people, whether they be vegan or not, enjoying my food. These Banoffee Balls are not vegan, however I recieved confirmation from Matt that they tasted delicious!
They are great fun and easy to make, things can get a little sticky, but there is no cooking and minimal ingredients required.
Ingredients
400g Digestive biscuits
1 Banana
1 Can toffee (I used Carnation)
Chocolate for coating
Method
1. Crush the digestive biscuits with a rolling pin and pour in to a mixing bowl.
2. Add 1 banana and half a can of toffe to the mixture. Continue adding toffee as needed until all the biscuit crumbs are coated without becoming too sticky.
3. Form the mixture in to 1 inch balls and freeze until firm.
4. Melt the chocolate in a bowl over a ban of hot (but not boiling) water and stir until melted. (Lucy's Top Tip: if the mixture begins to change in to a more granulated consistency add a teaspoon of butter and take off the heat).
5. Dip the balls in chocolate until coated and allow to harden in fridge.
6. Drizzle with additional toffee and sprinkle any remaining biscuit crumbs on top.

And this was the finished result of my attempt! Not quite as polished as the original but tasted great all the same!
